Let sit to marinate. Puree: 1 lb spinach Warm up skillet: add paneer after a couple of minutes, toss. Paneer should be browned another minute or so set aside on a plate In pan, add: 1 1/2 tbsp oil 1 medium onion, finely chopped 1 inch ginger, peeled & minced 4 cloved garlic, minced 1 large serrano chile, finely chopped (remove seeds to reduce spice) Saute until evenly toffee-colored, ~15 min. Can add a little water if it gets too dry. Add: 1/2 tsp garam masala (cinnamon, cloves, black and green cardamom) 2 tsp ground coriander 1 tsp ground cumin Sprinkle some water and cook 3-5 minutes until raw smell cooks out and it gets "more melodious". Add spinach, stir well Add some salt 1/2 water Cook about 5 min. Turn off heat. Slowly add: 1/2 c yogurt Add paneer cubes Cover and cook ~5 minutes until warm.
