Orange Beef =========== Reference: https://cooking.nytimes.com/recipes/1017697-orange-beef Sauce ----- In saucepan, heat: 1 tbsp oil add 1.5 inch fresh ginger, peeled & minced 1 jalapeno, seeded and minced 2 tbsp orange zest saute until softened, 2-3 min add 3 garlic gloves, peeled & minced 1-2 more minutes add juice of one orange 1/4 c light brown sugar 1/4 c rice vinegar (not seasoned) 1/4 c soy sauce 1 tbsp fish sauce boil then simmer 10-15 min until reduced by half Meat ---- combine in bowl: 1 egg white 1 tbsp corn starch 1 pinch kosher salt add and coat: 1 - 1.5 lbs steak, in 1-inch pieces In wok, high heat: 1/4 c oil add beef, 60-90 seconds on one side add 6 scallions, white pieces, cut into 1-inch long pieces turn beef over, about 3 more minutes transfer to platter Pour sauce into wok, let boil, stir Add meat, stir to coat, return to platter Top with green scallion pieces Serve with steamed broccoli rice
