Lemon Poppyseed Muffins

rub together
  2/3 c sugar
  grated zest and juice of 1 lemon

whisk in
  2 c flour
  2 tsp baking powder
  1/4 tsp baking soda
  1/4 tsp salt

in separate bowl, whisk together
  3/4 c sour cream
  2 large eggs
  1 tsp vanilla
  1/2 unsalted butter, melted and cooled

gently combine wet + dry, don't overmix

Stir in
  2 tbsp poppy seeds

Pour in muffin cups
Bake at 400F for 18-20 min

Cool before icing

Icing

In a bowl:
  1 c powdered sugar, sifted
  1.5 tsp lemon juice

Dribble additional lemon juice until thin enough

Drizzle over muffins
