Biscuits ======== from https://www.kingarthurflour.com/recipes/baking-powder-biscuits-recipe Mix: 3 c flour 1 tsp salt 1 tbsp baking powder 1 tbsp sugar Work into (with fingers, fork or pastry cutter): 6 tbsp butter, (at room temp) Make it evenly crumbly, like breadcrumbs. Drizzle into: 1 c cold milk Mix gently/quickly into ball; add a bit more milk if needed. Pat into 3/4" thick layer. Fold into thirds. Roll out to 3/4" thick again. Cut into circles, place bottom-side up on sheet, brush with milk. (Placing them closer together helps them rise and keeps sides soft. Placing further apart makes them more crisp.) Bake at 425F for 15-20 minutes [For shortcake, use 2 tbsp sugar in the dough, and dissolve a little sugar in the milk used to brush the tops.] [Optionally, chill the biscuits on the sheet before baking, ~20-30 minutes. Helps maintain shape.] Sourdough variation =================== 1 part sourdough discard to 1 part flour 2 tsp baking powder per 1 c flour 3/4 tsp salt per 1 c flour 8 tbsp butter per 1 c flour Mix the dry, then work in the butter, then add the sourdough starter to make dough. Add a little milk if too dry.
