Apple Pie ========= Pie crust: mix: 2 1/2 cups flour 1 tsp salt 1 tsp salt blend into coarse meal: 2 sticks unsalted butter, cubed & frozen add 1 tbsp water at a time until it starts to hold together. 6-8 tbsp ice water (max -- too much water makes crust tough) make two disks, wrap, refrigerate 1 hour to 2 days Pie: preheat 425F melt: 1/2 cup unsalted butter stir in: 3 tbsp flour add: 1/4 cup water 1/2 cup sugar bring to boil simmer with bottom crust in pan, fill with apples. cover with top crust, make holes pour liquid over top (slowly), flows through holes bake 15 min reduce heat to 350F bake 35-45 min
